As soon as my UPS lady delivered my shipment of Weisenberger Hard Whole Wheat Flour, I started a tasty loaf using the sponge method. It takes a bit more time but the bread stays moist longer. The first thing I noticed when I opened the package was a fresh and clean flavor, almost a sweetness. Such an improvement over the slight (and sometimes not so slight!) bitterness I've found in supermarket wheat flour. The dough developed plenty of gluten to make a nice rise in spite of my adding a bunch of goodies...sunflower, pumpkin, flax and sesame seeds, plus extra thick oats. Thanks, Weisenberger! Because I live a couple of hours away from your mill in Midway KY, I need to have it shipped and yes, that costs a little bit more but it's definitely worth it! I currently have three Weisenberger flours and two corn products on my shelves and I hope to never run out. Gotta love those Weisenberger folks!
