I was thrilled to learn you shipped orders out of state from your website. I visited the mill on a recent visit to Kentucky but I live in Florida. I ordered a 5 lb. bag of Pumpernickel Rye for my sourdough starter feeding and it was a joy to watch the starter bubble over grow. Never happens even with the finest store bought flours.

As far as I can tell this makes a really loose dough at all times which then produces a pretty flat loaf of bread which does have a ton of nice flavor. It is great with smoked fish spread or zucchini butter or whatever is available, you have to toast it first on high for a while for it to get good.
