About eight months ago I started making bread weekly, frequently ordering bread flour, yellow stone-ground grits, and yellow unbolted cornmeal from Weisenberger Mills. The extra cost of shipping is absolutely worth it because everything they offer is so fresh and of such high quality. I've used (and love) a variety of their products but Coarse Ground Whole Wheat Bread Flour was new to me. Yesterday I mixed it 50/50 with white bread flour, sweetened with a bit of brown sugar. Every week I experiment with something different (potato, oatmeal, yeasted cornmeal, etc) but this is the best loaf yet and this morning's toast was extra delicious! It has the fluffiness of a good homemade white bread but with bits of coarse ground whole wheat flour to give it better flavor and a little extra zip. Thanks, Weisenberger! You keep milling, I'll keep ordering, and the neighbors I share with will keep licking their chops when they smell bread baking next door. 😊🍞
